An apple based spirit from Normandy, which has a chequered history which encompasses brushes with the law, two world wars and regulation. In the modern day though, Calvados has evolved into a spirit of real quality and accessibility. Partly due to an obsession from the producers with retaining the flavour of the fruit.
Hailing from southern Normandy, this region specialises in making Calvados from pears. The difference in raw material, changes a lot the character of the liquid, with brighter, lighter flavours making their way into the spirit.
The Pays d’Auge region has strictly defined rules which govern its production in order to ensure quality of the product. This region specifies distillation and has minimum ages which govern labelling.
